Cinnamon Bread

Just one bite of something special can take you back to other times and places. This bread does that for me.

I've really lost count of how many loaves of this yummy bread I've made over the years. I've made dozens of these warm, spicy loaves for my family, dozens for bake sales, and another dozen for pre-church nibbles.

My grandma in Iowa makes an Amish friendship bread that tastes similar to this loaf. Which makes me think of lots of nice Amish things. Like barns, horses and buggies, and so many incredible baked goods.

But back to the recipe. 
 
The cinnamon flavor in this loaf is carried through strongly with lighter notes of vanilla and butter singing along. But the very best part?

The carmelized cinnamon-sugar crusted on top.

Recipe from Allrecipes.com

2 C. flour
3/4 C. sugar
2 tsp. baking powder
1/2 tsp. baking soda
1-1/2 tsp. cinnamon
1 tsp. salt
1 C. buttermilk
1/4 C. vegetable oil
2 eggs
2 tsp. vanilla
2 T. sugar
1 tsp. ground cinnamon
2 tsp. butter

Preheat oven to 350 degrees F. Grease and lightly dust one 9x5-inch loaf pan with flour.

Combine dry ingredients and wet ingredients separately, then combine just until moistened. Pour batter into prepared pan. Combine sugar, cinnamon, and 2 teaspoons butter until mixture resembles brown sugar in texture. Sprinkle over batter, then lightly swirl into top of batter with a knife.

Bake for 50-60 minutes or until a toothpick inserted in center comes out clean. Transfer loaf from the pan to a cooling rack.
